Cava
Cava is a Protected Designation of Origin for Spanish sparkling wines produced by the traditional method.
The region covered by the designation of origin, called the Cava Region, mainly comprises the Catalan region of Penedès.
The main varieties of grapes used in the preparation of cava are: macabeo, parellada and xarel·lo, and each one gives cava characteristics that complement each other.
Macabeo provides sweetness and perfume, parellada provides finesse, freshness and aroma, and xarel·lo provides body and structure.
